Cookies or biscuits?

Always cookies right? Choco chip cookies, butter cookies, nuts cookies etc are the most common cookies we have had growing up. What about grown up cookies? don’t we still crave for cookies but apart from the childhood ones?

yea… I feel that same way too. here is this awesome Indian recipe that fulfills your tea time cravings. This coconut cookies are something which can be very commonly found in a tea stall in my village side…almost most of the tea shops will abutting the highway / Internal road will sell this stuff.

Recipe:

Whisk ghee and sugar together. Whisk until white and fluffy. Add sugar gently mix them all.

Add flour, dessicated coconut and cut – fold the mixture. Add milk and bring all the mixture together

at this stage it will look like a dough. no need to knead for a long time. We don’t want any gluten to be released.

In a baking tray align parchment paper. roll a small lemon sized dough and roll it over dessicated coconut until fully coated. press slightly and place it over the tray. keep it 1 inch apart.

Bake at 180 – 200 degree for around 10 – 12 minutes. or until you see light golden brown on top.

if you want to be very soft then take it out while they are still white on top but insert a skewer and check whether they are cooked  or not.
