Corn cutlet recipe – Indian Style

Just like how tomatoes, squash, cucumbers are classified as fruits Corn is also termed as a fruit by botanist

Corn is a very healthy nutritious grain / vegetable / fruits or food that serves carbs, cholesterol, sugar, protein, sodium, saturated fat and trans fat in a single serving. very healthy and a must ingredient for growing children, pregnant woman and lactating mothers.

There are two versions to make the cutlet one with churning the corn and other using the corn as whole. out of which the whole corn gives a very subtle taste. 

corn cutlets can be served as a breakfast menu, evening snack and a patty for a burger. here is a very simple recipe of corn cutlet in Indian version.

Method :

Take 150 grams of fresh sweet corn and boil them, set aside. take 4-5 large potato , boil them , mash and set aside.

you can also pressure cook both corn and potatoes (cut into cubed sized) together. dont forget to add salt.

In a wide mixing bowl, add paprika powder, pizza mix herbs, kashmiri red chilli powder for colour, salt. add finely chopped green chilly and coriander leaves (without any stem part) and give a good mix.

Make a medium sized ball in hand and give a gentle press flattening equally from the center towards the outer sides.

Right before you are about make patty and fry , add a couple of tablespoon corn starch to achieve crispy texture to the patty. If you add it prior and let the mixture sit for a longer time then you may lose the crispness of patty.

heat some oil in a flat pan. Place the patty and shallow fry from both sides.

Nutritional tip :

Adding more exotic vegetable or regular common vegetable will be more beneficial to health. we can finely chop and saute a bit before adding to boiled ingredients. but adding so will make the patty more clumpy and a bit unmanageable. Incase if you can manage it try to make it more nutritious.

Serving tip :

Ready to serve with mayo, chilli jalapeno dip, sweet and spicy sauce, cheesy dip etc,
