Ridge gourd curry | Turai ki sabzi | Peerkangai kootu

Sometimes the best way to prepare any recipe is to keep it as simple as possible.

few such vegetables are okra, ridge gourd, colocasia, snake gourd, tapioca etc.

I make this ridge gourd gravy in a very simple style which not only takes 15 minutes for preparation but also tastes heavenly.

METHOD :-

  1. In a chatty heat oil, a little extra oil than usual.
  2. add mustard seeds to splutter. no need of jeera.
  3. add finely chopped onions and saute until golden brown.
  4. add finely chopped tomato and salt. saute until mushy.
  5. Now time for spices. at this stage keep ridge gourd cut and ready.
  6. All spice as mentioned goes in.
  7. adjust water and salt.

NOTE :-

  • Do not let the spices cook for long time. once you had spices, give a quick stir, add ridge gourd followed with water.
  • This process of cooking brings a lot of difference to this recipe.
