About Ridge Gourd
Ridge gourd, known as “Peerkangai” in Tamil, “Turai” in Hindi, and “Beerakaya” in Telugu, is one of the most underrated vegetables found in Indian kitchens. With its high water content and mild flavor, it easily absorbs spices and seasonings, making it perfect for curries, kootu, stir-fries, and chutneys.
Growing up, ridge gourd was a regular part of our summer meals. Its light texture and cooling nature make it an ideal vegetable when you want something nourishing yet easy on the stomach. Unlike rich gravies that require several ingredients and long cooking times, ridge gourd recipes are usually simple and quick.

METHOD:-
- In a chatty heat oil, a little more oil than usual.
- Add mustard seeds to spatter; no need of jeera.
- Add finely chopped onions and sauté until golden brown.
- Add finely chopped tomato (peel the tomato skin) and salt. Sauté until mushy.
- At this stage add ginger-garlic-green chili paste and fry until the raw smell is gone. Don’t let any ingredient burn.
- Now time for spices. At this stage, keep the ridge gourd cut and ready.
- Allspice, as mentioned goes in. add a pinch of sugar at last
- adjust water and salt.
Serving Suggestions
This ridge gourd curry tastes best with hot steamed rice and a spoonful of ghee. It also pairs wonderfully with chapati, phulka, or simple dal rice. For a complete meal, serve it alongside papad, pickle, and a bowl of curd.
Storage Tips
Store any leftovers in an airtight container in the refrigerator for up to one day. Since ridge gourd contains a lot of water, it is best enjoyed fresh. Reheat gently before serving and avoid overcooking to preserve its texture.
