200 g Spaghetti

1 cup Caramelized onions (fresh, homemade)

4 - 5 Garlic cloves

1/2 cup Fresh cream

2 tbsp Chilli oil (homemade)

2 tbsp Liquid cheese

2 tbsp Grated parmesan cheese

1 - 2 tspn Pizza pasta seasoning mix

(as per tatse) Salt

(as required) Pasta water
Directions
A rich and comforting pasta made with slow-cooked caramelized onions, cream, garlic, and a hint of chili oil—finished with cheesy goodness.
Perfect for a cozy meal at home.
What started as a simple experiment turned into one of those recipes I now go back to again and again. There’s something about the sweetness of caramelized onions blending into a creamy, cheesy sauce that makes it feel warm and satisfying without trying too hard.
Over time, this pasta has become one of those easy go-to meals at home—especially on days when you want something indulgent but still simple to put together. It’s also one of those dishes you can quietly enjoy on your own or share with family over an unplanned meal.

Cooking instructions:
Start by boiling the spaghetti in salted water until it’s cooked just right—not too soft, not too firm. Reserve a little pasta water before draining, as it always helps bring the sauce together later.
In a pan, add oil followed by the butter. Add the onion that has been cut into long strips and fry it until it turns a honey-golden color. No need to brown it at all. Finally, add some brown sugar (or regular sugar if you don’t have any) to the onions to help them caramelize.
Now add in the fresh cream and add a little pasta water to loosen the sauce. Stir gently and let it come together into a smooth, creamy consistency.
Add the liquid cheese and mix until everything melts into the sauce. Sprinkle in the pizza pasta seasoning and chili oil. Adjust salt according to your taste.
Now add the cooked spaghetti and toss everything together so the pasta is well coated. Keep the flame low and let it all blend together nicely.
Finish with grated parmesan cheese and give it one final gentle mix.
Optional additions:
You can also add:-
a pinch of paprika for colour.
a few sesame seeds.
a dash of soy sauce for depth.
fresh basil leaves if you like the minty touch.
Recipe for Chilli Oil
Ingredients:
Chilli flakes, garlic (chopped), soy sauce, vinegar, sesame seeds, and hot oil.
I added a bit of Kashmiri chili powder for the rich color.
Method:
Heat oil until hot (not smoking).
Pour over the dry mixture.
Mix and let it sit to infuse.
