Rice flour crispies
Evening snack becomes a big stress, especially on the days when the kids are less than 5 years old.
We really cannot introduce packed foods every now and then for their hungry cravings. So few recipes that children can have everyday that will be fulfilling and healthy is one such South Indian recipe called ‘Rice thattai.’
meaning flat chips made of rice flour
Method:
- Take rice flour, roasted gram dal, soaked split moong dal, red chili powder, Kashmiri chili powder (1/2 tsp), salt as per taste, asafoetida, and crushed few curry leaves after frying in oil, Butter or ghee.
- Oil for frying. Prefer healthy oil for deep frying.
- Crush the roasted gram dal very coarsely with a whisk so it will be easy to flatten the dough. Mix everything well and roll it into a tight dough.
- Let the dough not be too soggy or too soft, else it will soak up enormous oil while frying.
- Use a piece of parchment paper, fold it in two, spread oil over the inner side, take a small lemon-sized piece of dough, place it in the center of the sheet, and use the backside of a wide, flat bowl to flatten the dough equally.
Note:
We won’t be using a rolling pin here as it may lead to breakage and uneven thickness of dough.
The flattened dough needs to be thick enough.
Remove and fry two crispies at a time.
As rice flour tends to burn quickly.
Keep it on medium-high flame.
