1 Egg

1 cup All purpose flour

3/4 cup Milk

1 tbsp Castor Sugar(Adjust as per your taste)

1/2 tspn Baking powder

A pinch or two Salt

1 tbsp Melted butter(save some for brushing the pan)

2-3 drop Vanilla extract(can be optional also)
Directions
My daughter’s love for pancakes inspired me to start making them at home. When her craving for pancakes turned into an “every now and then” request—and the nearest store wasn’t always close or convenient—I decided to learn how to make them at home. What started as a small effort for her soon became a simple, comforting recipe I enjoy making again and again. Baking cakes and cupcakes and pancakes are all fun moments in family time that you can always do with your other family members as well. It makes a childhood memory and creates a good family time that lasts a lifetime.
Method:
Whisk egg and sugar until slightly frothy just with a regular hand whisker. Add milk slowly and give a complete mix. Pour the melted butter and again give one gentle stir.
Now we start adding dry ingredients gently like flour and baking powder that is already sifted. At this point we would switch to a silicone spatula or a batter spatula. Mix well, check for any lumps, and set aside. Because we have added baking powder, we won’t be mixing hard or for too long.

Topping option:
Serve with
- wild organic honey.
- Maple syrup.
- fresh, thinly sliced banana.
- Nutella.
- Cream cookie spread.
- Plain butter
- peanut butter
- Butterscotch spread
- Ice cream
- Whipped fresh cream
Or sometimes simply without any topping also goes well, especially while it’s piping hot. It just melts.
Never knew this American dish would be the hero breakfast dish in a South Indian household.
Note*
- I prefer to use less baking powder, and I don’t use baking soda either. It works perfectly for me. Only the timing matters here when adjusting the baking powder quantity. In case you find it less fluffy, just add upto 1/2 a tsp more.
- Batter should be of a pouring consistency, which should be neither too thick nor too runny.
- Eat it while it is hot just to experience the melt-in-mouth moment.
