    Aloo Methi is one of those classic Indian sabzis that many of us have grown up eating. The combination of potatoes and fresh fenugreek leaves creates a comforting dish that pairs beautifully with chapati, paratha, or even plain dal rice.

    While traditional Aloo Methi recipes are simple and flavorful, some people hesitate to make them because of the slight bitterness naturally present in methi leaves. Over the years, I discovered a small twist that helps balance those flavors without taking away the authentic taste of the dish.

    The secret ingredient is a spoonful of fresh hung curd. It adds a mild creaminess and subtle tanginess that complements the methi beautifully while reducing its bitterness. The result is a delicious Aloo Methi sabzi that even picky eaters may enjoy.

    Preparation Method

    Separate the methi leaves from the stems and discard the tougher stalks. Wash the leaves thoroughly in water to remove any dirt and grit. Drain well and roughly chop them before keeping them aside.

    Peel the potatoes and cut them into medium-sized cubes. Heat a frying pan with a little oil and shallow fry the potato cubes until they turn lightly crisp and golden brown. Remove and set aside.

    In a wide pan, heat oil and add mustard seeds and cumin seeds. Once they begin to splutter, add curry leaves and green chilies. Stir for a few seconds before adding the ginger-garlic paste.

    Add the chopped onions and sauté until they become soft and lightly golden. Mix in the chopped tomatoes and cook until they soften completely.

    Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well. Now add a tablespoon of fresh hung curd and stir continuously so that it blends smoothly into the masala.

    Add the chopped methi leaves and cook for a few minutes until they wilt. Finally, add the fried potato cubes and gently mix everything together.

    Cook for another 3 to 4 minutes so that the potatoes absorb the flavors of the masala and methi.

    Serve hot.
