1¼ cups Water
1 tspn Rice vinegar
A.P.T Salt
For Teriyaki Paneer
200 grams Paneer, cubed
4-5 tbsp Ready-made teriyaki sauce
1 tspn Sesame seeds
1/2 tspn Soy sauce
1/2 tspn Rice vinegar
1/2 tspn Ginger minced
1/2 tspn Garlic minced
1/2 tspn Honey / Brown sugar
Vegetables & Toppings
2 tbsp Broccoli florets
2 tbsp Bell peppers
2 tbsp Carrot
2 tbsp Spring onion greens
2 tbsp Zuccini
2 tbsp Shitake mushroom
2 tbsp White button mushroom
2 tbsp Onion
A.P.T Salt

    Preparation

    Wash the rice 3–4 times until the water runs mostly clear. Add rice and water to a pan or rice cooker and cook until soft and sticky. Once done, gently mix in rice vinegar and salt. Keep covered for 10 minutes.

    Step 2: Cook the Paneer

    Heat oil in a pan and shallow fry the cornflour-coated paneer cubes until lightly golden and crisp on the edges. Remove and keep aside.

    Pour the prepared teriyaki sauce over the paneer and toss gently until every piece is coated beautifully.

    Step 3: Make the Teriyaki Sauce

    In a wide pan, add a little oil along with spring onions, ginger, and garlic and sauté briefly.

    Now add soy sauce, vinegar, Honey and the ready-made teriyaki sauce. Mix well and allow the sauce to simmer gently.

    Add the cornflour slurry and cook until the sauce turns glossy and slightly thick.

    Finally, add the fried paneer cubes back into the pan and toss everything together until the paneer is well coated with the sauce.

    Step 4: Sauté the Vegetables

    In a wide pan, lightly stir-fry all the vegetables mentioned for 2–3 minutes while keeping them slightly crunchy yet cooked. Add salt and pepper.

    Step 5: Assemble the Bowl

    Add sticky rice to a serving bowl. Arrange the teriyaki paneer, sautéed vegetables, cucumber, and carrots beside the rice.

    Garnish with sesame seeds and spring onion greens.

    Serve hot.
